Description
The VA Medical Center Washington DC (WASVAMC) Dietary and CLC Kitchens has within its inventory approximately thirty-eight (39) assets used to prepare meals for veteran patients during their stay. The equipment consists of components for the dietary staff to prepare food, prepping or assembly equipment to assemble trays for delivery, warming or holding equipment to maintain the food s freshness and ready-to-serve state until delivered to patients, dishwashing equipment including conveyor systems working in conjunction to move dishes through the was/dry process meeting required temperatures and dryness to maintain an antibacterial environment. The equipment is manufactured by several manufactures requiring service technicians to have a broad and diverse knowledge of each unit. The technicians need to have a variety of parts unique to each unit available to enable the equipment to be returned to service expeditiously to allow the dietary staff to provide the food services at a level to maintain accreditation of the facility. The demand posed by the dietary operation exceeds the electromechanical shop s ability provide the necessary services and timelessness due to the size of staffing, the needed training on the diverse equipment and delayed acquisition of parts. Parts needed come from a variety of vendors and the process to research and obtain quotes and then, waiting on parts lends the process to extreme down times, thus affecting the dietary kitchen process to provide meals to the veteran patients during their stay.
